having a good old cook out this sunday and need some ideas for side dishes. we got baby back and large beef ribs,chicken,conecuh sausage made in conecuh county alabama and 24oz porter house steaks. what i am tired of is the usual potato salad and my sister's mysterious 7 layer bean salad which i stay away from.
what i would like is some ideas on veggies and potatoes that include the grill. also if you have any ideas that don't include the grill i am listening.
if i make any of the recipes you guys give me i will take pics of it and post them.

Have a think about this.
Tzatziki
Ingredients:
500ml plain yoghurt 4-5 cloves of garlic. Finely grated/minced 1 cucumber 4 Tbsp olive oil 2 Tbsp vinegar
Method:
Grate the cucumber and drain as much liquid from it a possible. If you can, use a strainer and place a small plate with a weight on it to press the water out.
Mix the cucumber with the yoghurt in a bowl. Then, mix in the garlic.
Alternate mixing in the oil, then, the vinegar into the bowl.
Ideally, let it sit for an hour or two, then, give it a quick stir again before serving.
Serve it with pita bread.
Or. For the grill. 2 things that never seem to fail. Might be awkward if you have loads of people. But, you could do first and just chuck'em back on to heat up.
both are per person.
1. Get a potato. Slice it into thin slices (about 1/8 of an inch). Slice an onion thinner. Use about 1/4 onion per potat. Or, trust your eyes. Then wrap both in foil with some butter, salt and freshly ground pepper. Throw directly onto the coals for around 30-40min (keep the seal upwards so that the butter doesn't leak out). Use a maximum of 3 potatoes per parcel.
2. Corn on the cob. Can't really go wrong. Take a whole cob and cut it in half (wrap it in foil) and chuck on the grill. Turn it every 5 or so minutes till its done. What I tend to do, is melt a little butter and honey together then when grubs up, dump all the cobs in a bowl, pour the butter mixture over them and give them a quick toss to coat them.
Just a quick response. As most of it would depend on the tastes of the guests.

you might want to check out that bobby flay guy he s like the grill master ....he probably has tons of side dish recipes for cookouts but beware he is ginger....

not sure about the yogurt recipe concrete. but my wife and sister might be interested in it. now the potato and onion idea i love. the butter and honey mixture over the corn is first rate and i will be doing that one. i think i can manage the potato recipe without too much hassle. we have two large grills and one can be used to cook the steaks which take a lot less time then the others which will leave the coals open for use and the steaks can go on last.
let me ask you this concrete. how do you think some slices of sharp cheddar cheese would fair in the foil with the potatoes and onions? would i need to put the slices on say about 10mins before taking the packets off the coals or would the cheese be ok for the duration of the cooking time? i really want to try it i just hope i can pull it off.
wiggy..........bobby is the man no doubt but most of his recipes are spicy and i am a wuss when it comes to spicy foods.

ok wisey mc crackington heres one thats tasty now i don t much go for the asparigus but something happens to it in this recipe that makes it tasty Ingredients 10 spears fresh asparagus, trimmed 1/8 teaspoon pepper 5 bacon strips, halved lengthwise
1.put the asparagus on some waxed paper; coat with nonstick cooking spray like pam Sprinkle with pepper you don t really need salt cause the bacon is loaded with it already,; then flip it over to coat he other side . cut the strips of the bacon length wise then ya Wrap a bacon piece around each spear so you have asparagug on the inside and bacon on the out side ...; stab the ends with toothpicks so it doesn t come unwrapped. Grill, uncovered, over medium-low heat for 8-12 minutes or until bacon is crisp, turning occasionally. make sure you take the toothpicks out before you eat these cause if your drunk you will impale your tounge

you can also just grill most veggies coat them with a little olive oil salt and pepper .and chuck them on the grill ... just make sure you cut them thick or put them in a grilling basket so they dont go into the pit of lost grilled items ...

onions can grill well or stick em in foil like this 1 large onion, peeled 2 tablespoons butter, melted seasoned salt to taste salt to taste pepper to taste garlic pepper to taste Directions 1.Set peeled onion upright on a sheet of foil. Make several deep slices in the onion without cutting completely through the onion. 2.Pour butter over the onion. Sprinkle with seasoned salt, salt, pepper, and garlic pepper. Place the onion on a grill directly above a hot campfire, and cook until the onion is soft, about 20 minutes. yea roasted garlic is nice too you just squeeze the cloves out and they re like butter spread it on some fresh french crusty bread you Slice 1/4 inch off top of garlic bulb. the whole big clump of garlic .. slap some butter or olive oil cook it on the grill in wrapped inside foil for about 20 minutes until it is soft and lightly brown the hit the bread with it .
