Cucumber And Feta Salad
A simple and delicious recipe for cucumbers. The combination of flavours brigtens up a summer lunch.
Ingredients
Serves 4
2 cucumbers (medium or large)
100g Feta cheese
100g black olives, pitted (stones removed)
1 tablespoon fresh mint leaves, chopped
1 tablespoon natural yoghurt 50g sunflower seeds, toasted (optional)
Method
Wash the cucumber. Trim the ends. Cut the cucumber into cubes (about 1cm / ½ inch in size)
Put in a bowl with the chopped mint and the yoghurt. Mix well.
Add the olives. Crumble the Feta on top - mix well.
Serve sprinkled with the sunflower seeds.

Courgette & Cracked Bulgar Wheat Salad
This delicious recipe makes the most of summer's courgettes (zucchini) and cracked bulgar wheat is a delicious, nutty companion to the creamy smoothness of the courgettes. It also works well with couscous or quinoa, if you prefer.
Ingredients
½ cup cracked bulgar wheat
2-3 medium courgettes (zucchini)
2-3 medium carrots
1 medium onion
1 clove garlic
50g (2 oz) Cheddar (hard) cheese
1 tablespoon olive oil
½ stock cube
Method
Put the cracked bulgar wheat in a bowl and cover with twice its voume of boiling water. Cover with a clean cloth and leave for 25 minutes, until the water has been absorbed and the bulgar wheat is fluffy.
Meanwhile, warm the olive oil in a pan. Peel and chop the onion. Saute in the oil for 5 minutes.
Peel and crush the garlic clove. Scrub (or peel) and finely chop the carrots. Add to the onion and saute for 5 minutes. Stir often so they don't burn.
Grate the courgettes (or slice finely). Grate the cheese. When the carrots are soft, add the courgettes and cheese to the pan. Mix well, put the lid on and leave until the bulgar wheat is ready.
When the bulgar wheat is cooked, add it to the pan and mix well. Serve immediately.

Tomato And Avocado Salad
Late summer is a time when many veg box schemes and home veg growers have a glut of tomatoes. If you’ve got some that are really ripe and full of flavour, then this simple salad is really delicious.
Ingredients
Serves 4
4-6 medium tomatoes
2 spring onions (optional)
1 ripe avocado
200g lettuce leaves (any combination)
Dressing (optional)
1 tablespoon white wine vinegar
Juice of &fract12; lemon (optional)
1 tablespoon olive oil
&fract12; teaspoon runny honey
Handful mixed summer herbs, chopped (e.g. parsley & chives)
Method
Wash the tomatoes and spring onions.
Chop the tomatoes roughly. Slice the spring onions.
Peel the avocado and remove the stone.
Chop the avocado flesh into small chunks.
Wash the lettuce leaves and dry well.
Mix all the dressing ingredients together, until well combined (a small screw-top jar is the easiest way to do this).
Mix all the salad ingredients together and drizzle the dressing on top. Serve immediately.
