Right. It's not so much a recipe. But more a method. When you say cornish hen. I'm going to guess you mean a small chicken. I've done this with poussin and it was brilliant. Oi!!! Sammy!! Dunnow if you cooked those midget chickens yet. But, I did some last week. 2 of them spatchcocked under the broiler with a BBQ rub. Cooked until done. Fecking loverly they were.
