i like to marinade mine in worcestershire sauce, garlic cloves and some onions. then grill them.
as a side i take the marinade with the onions and garlic add some butter and beef broth and bring it to a slight boil then add cooked rice until the rice soaks up all the sauce.
damn i am hungry now.

Thenn you're getting shitty steaks. hide? try enhance. i love steaks cooked in many different ways. in fact there are thousands of tried and true steak recipes that include sauces and rubs. i don't think anyone would accuse a great steakhouse of hiding their dry aged beef's flavor for offering a fillet with a peppercorn sauce do you? perhaps you are too afraid of stepping out of ya little concrete bunker of flavors to try something new?

In order to tenderize a tough cut of meat, something that is acidic usually works, The enzymes, especially in marinades using tropical fruit break down the connective tissue. But as a rule, tough cuts should be braised, and how you cook them is what it really comes down to. Most marinades just add flavour, but don't tenderize the cut. Sear it, then cook it in a sauce for a couple of hours. Tender, and it absorbs the flavor of the sauce
