I posted this before and I think I deleted it before I sent it. And for this, I will get roasted over the coals. And deservedly so. Probably in the wrong category if it's on there. Ohgodohgod! As you know I am a chef. Love my food, make fancy food et al. Curious as to what you people like to eat as a fave. I love my striploin steaks, roasted potatoes and a well made pizza. Give me your thoughts and any ideas on recipes. I have a culinary competition on Thursday and have something real special lined up. If you are interested in the pics of the dish, then I will post. If not, well, then starve. hehe

Chili, w/lots of jalapenos, diced and peeled fresh roasted chili's, spanish style stewed quartered tomatoes, red onions, pinto beans, and shredded smoked briskit. If your head doesn't perspire after the first bite, add more jalapenos.

Nice hesop. Have smoked Jalapenos, Should do the trick. I'm not worried about my head, I'm worried about my computer screen when I turn around. Oh good god man. Thats a hell of a combination. Weapon of mass disfunction. But the recipe is very sound. Thank you

P.S. I cooked for one year, at my sisters restaurant when her health was failing. When I first went there, it was intended to be just for a few months, until she could sell. I wasn't a chef. I was a cook. Her and I alone did all of our prep and cooking. Occasionally, we might have one extra person help out on fridays, for a short time in the afternoon. It was called J's Smokehouse, just off I-40 in Sallisaw Oklahoma, about 2 miles east of Blue Ribbon Downs Race track. Most friday nights, we would serve close to or over 600 people. Hardest fucking job I ever had in my whole life.

Slith, I would love to see your pics of your competition... good luck with it too! Food... the ritual of cooking and eating together is being lost. Its a 'biggy' in my house that we cook and eat together at least once a week. The other times, it's still a ritual I perform myself. The picking (mostly from my garden), the preparing and the actual cooking. My fav's... has to be a good roast dinner, roast potatoes in goose fat, Yorkshire puddings, loads of different veg and any piece of meat a good vet could bring back to life lol I'm a cake fan... I love cakes. I also love a good chilli and curry. My fav of all has to be seafood, I could live off any seafood for the rest of my life, love the stuff.
