Flashpoint for olive oil is 375, canola is 450. Concrete is right in his cooking method. It can also be done in a pot, but you have to watch it like a newborn, or it will burn. Arborio rice is what they make risotto with. The only problem I have with that is in the absorbtion. It's more of a sponge and you need more water, which can alter the flavor of the dish.

i always do my paella outside over a fire (hardwood/fruitwood mix) and i smoke some of the seafood over the fire for a short while B4 placing in "The Pot". the extra little bit of smoke takes it to the next level.
