Side Dish!!!
Zucchini boats - take plum tomato and chop into small cubes. Slice zuchhini in half the long ways. Use spoon to edge out flesh of Zucchini. Compile the removed flesh, diced plum tomatoes, parmesan cheese, cracked pepper, salt, chopped kalamata olives (not a lot, as the cheese, salt and olives are all packed with sodium) and some fine basil in a bowl. Mix altogether and refill the Zucchini boats. Place in oven and bake for 25-30 min...its delish! and easy to make...goes well with any italian main dish.
Add in ground meatball to the mix to make a main course too...
